Incidence of Adulteration of Paneer and Khoa Samples Collected From Some States of Northern India

Different types of adulterants e.g sugar, starch, wheat flour, common salt, baking soda, washing soda, urea, hydrogen peroxide and formalin (Misra, 2000) have been used for the purpose of adulteration of milk and milk products depending upon the situation. A survey was conducted in the northern states of India for checking the extent of adulteration in market samples of paneer and khoa. The samples were found to be adulterated with glucose, neutraliser and starch.
