Effect
of Antifungal Agents on Keeping Quality of Khoa

24 khoa samples were collected from the
organized dairies. These samples were analysed in the
laboratory. The samples treated with Natamycin (0.5%)
and potassium sorbate (0.3%) as antifungal agents, showed
lower yeast and mould count during storage at 30°C
and 5°C. These findings were supported by chemical
and organoleptic evaluation of antifungal treated khoa
samples during storage.
