Fermented Milk Products as Nutraceuticals:

An Ayurvedic Perspective

Abstract

"Fermented milks have constituted a vital part of human diet in many regions of the world. Ancient scholars of India identified and described the functional, nutritive and therapeutic properties of fermented milk products. Ayurveda utilises the technique of fermentation in many of its medicinal preparations. It also gives great emphasis to fermented milks as foods in pathyakalpana or dietary regime."
