Cheese Drying — A Novel Way to Conserve Cheese Solids

Abstract

"It is difficult to dry cheese satisfactorily because of the high proportion of fat in the moisture-free substance. Hence, proper control over the drying process is essential in order to avoid destabilization of fat and also to retain flavour."
